Ingredients for Mississippi Chicken Tacos:

- Boneless, Skinless Chicken Breast or Chicken Thighs
- Dry Ranch Dressing Seasoning Mix
- Brown Gravy Mix (or Gluten-Free Brown Gravy Mix)
- Unsalted Butter
- Pepperoncini Peppers
- Taco Shells
- Shredded Cheese
Step-by-Step Instructions for Air Fried Chicken Tacos:
- Preheat the air fryer to 400 degrees F for 5 minutes with a cake pan or any container that is heatproof. I used an 8-inch cake pan.
- In a small bowl, mix the dry ranch seasoning and dry gravy mix.
- Place the chicken breast into the preheated pan.
- Sprinkle the dry seasoning mixture directly over the chicken.
- Cut the butter into small slices and place over the chicken along with the peppers.
- Air fry at 350 degrees F for 9 minutes, carefully flip the chicken and cook for an additional 9 minutes or until the internal temperature reaches at least 165 degrees F.
- To shred the chicken, carefully remove the chicken from the cake pan and use 2 forks to shred the chicken.
- Place back in the cake pan and mix well.
- Place the cake pan with the shredded chicken back into the air fryer at 350 degrees F for 2 minutes to warm back up.
- Fill taco shells with chicken, top with cheese and peppers.
- Place tacos in the air fryer basket and air fry at 350 degrees F for 4 minutes.
- Carefully remove and serve.

Tips for Best Air Fryer Tacos:

- Use crispy taco shells, keep them gluten-free if needed!
- Add the chicken and cheese then put them in the air fryer, add the remaining toppings after.
- Don’t overload the tacos, be sure to stand them up in the air fryer basket, using each of them to hold the next on in place.
- Remember if you are cooking the chicken and not using leftover chicken that the chicken must reach an internal temperature of at least 165 degrees F, this can be checked with a meat thermometer.
Storage Tips:
Store the leftover chicken separately from the taco toppings in an airtight container in the fridge for up to 4 days. When ready to reheat, heat the chicken in a heat proof pan in the air fryer at 320 degrees F for 3-4 minutes or in the microwave on a microwave-safe plate.
