A few months back now, I whipped up these fabulous Air Fryer Cheesy Beef Enchiladas. This post will show you exactly how to make Air Fryer Enchiladas.
These enchiladas are packed with flavorful fillings, topped with cheese, and perfectly crisped in the air fryer, these enchiladas deliver all the flavor you love without the need for deep frying or excessive oil.

Air frying speeds up the cooking time but it also still provides that taste and texture that you know and love, these are quick to become a family favorite.

What ingredients do you need for Air Fryer Enchiladas?
- Ground Beef
- Taco Seasoning or Gluten-Free Taco Seasoning
- Flour Tortillas or Gluten-Free Tortillas
- Black Beans
- Diced Tomatoes
- Chopped Green Chilies
- Red Enchilada Sauce
- Mexican Cheese
- Fresh Cilantro
- Sour Cream

What is the best Gluten Free Tortilla for Gluten Free Air Fryer Cheesy Beef Enchiladas?

If you need gluten-free, I’ve found these Gluten Free Mission Tortillas to be the best option.
The other alternative is to use a White Corn Tortilla. I do suggest with either option, warming them up first to make them more pliable when preparing them.
I used the Gluten Free Mission Tortillas for these that you see in the pictures in this post.
Expert Tips for Air Fryer Enchiladas:

Do not overfill the tortillas, be sure to add just enough ingredients but if you overfill them they will bust during the cooking time.
To make them crispy on the outside, spray the enchiladas with olive oil cooking spray before beginning to air fry.
You may need to do multiple batches depending on the size of your Air Fryer Basket and how many tortillas you plan to make.
How do you make Air Fryer Enchiladas?
Air Fryer Enchiladas are easy to make, simply wrap up all of your cooked ingredients into the tortilla of choice and then place it inside your air fryer basket.
To keep things clean, I like to use a sheet of foil underneath the enchiladas.
Always make sure to keep the foil wrapped up on the sides, similar to the picture above so that the air will still circulate in your machine.
If you do not want to use foil, you could also use a pan that fits inside the air fryer basket.
How do you store the leftovers?

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. When you are ready to reheat, air fry for 3-4 minutes at 350 degrees F on a heat-proof plate.

Air Fryer Mexican Inspired Meals:

Air Fryer Cheesy Beef Enchiladas
Ingredients
- 1 Pound Ground Beef
- 1 Package Taco Seasoning or Gluten Free Taco Seasoning
- 8 Gluten Free Tortillas or Regular Flour Tortillas *See Note*
- 1 Can Black Beans Drained & Rinsed
- 1 Can Diced Tomatoes Drained
- 1 Can Mild Chopped Green Chilies Drained
- 1 Can Red Enchilada Sauce
- 1 Cup Shredded Mexican Cheese
- 1 Cup Chopped Fresh Cilantro
- 1/2 Cup Sour Cream
Instructions
- Begin by browning the ground beef in a medium sized skillet.
- Add in the taco seasoning as instructed on the package.
- Build each tortilla by adding beef, beans, tomatoes, and chilies.
- Place each one inside the basket of the air fryer, if preferred; line the basket with foil first.
- Once all the enchiladas are made, pour the enchilada sauce evenly over them.
- Evenly add the cheese on top.
- Cook at 360°F for 5 Minutes in the Air Fryer.
- Carefully remove, add toppings, and serve.

Easy and delicious! I also use foil on the bottom for easy cleanup, but I don’t like to set my food on foil, so on top of the foil I put parchment paper and put my enchiladas on that. My air fryer stays clean, I have easy clean up and I didn’t have to place my food on foil. 🙂
