Make Crispy, Air Fryer Roasted Vegetables in just about 20 minutes with simple ingredients!
Making vegetables in the Air Fryer is likely going to be the first thing you’ll want to do when you get your air fryer. They are easy to make and come out nice and crispy.

Air Fryer Roasted Vegetables can be made with a variety of vegetables. In this case today, I’m focusing on baby potatoes, carrots, and sweet onions.
Other options would be this Air Fryer Roasted Okra or Air Fryer Corn on the Cob.
How do you roast vegetables in the Air Fryer?
Basically roasting vegetables is cooking vegetables uncovered in an open heat environment, so it’s easy to do in a variety of appliances such as a grill, oven, or air fryer.

In the Air Fryer, it’s best to roast them at 390*F, and then depending on the vegetable 20 minutes is usually a go-to time, but as always check on your vegetables if it’s the first time you are using your machine.
It’s also good to use a cooking oil spray such as grapeseed oil spray, which has a higher smoke point.
I use this oil spray throughout the cooking time, when I’m mixing them up about halfway through the cooking time, I like to give them another coat of oil spray.
Can you use foil in the air fryer?

Foil can be used in the air fryer, but if you do use foil be sure to roll it up a bit on the sides so that air still fully circulates.
This really cuts down on the clean-up in the air fryer and can keep some of the smaller vegetables such as onion or peppers from falling through the basket of the air fryer.

If you prefer to not use foil, you can also use these silicone mats that work well too.

Air Fryer Roasted Vegetables
Ingredients
- 2 Large Carrots, Diced
- 1.5 Pounds Baby Potatoes, Halved
- 1/4 Cup Sweet Onion, Diced
- 1 Tsp Garlic Salt
- Grapeseed Oil Spray
Instructions
- In the basket of the air fryer, coat it evenly with grapeseed oil spray.
- Add in the carrots, potatoes, and onion.
- Mix this up well and evenly add the garlic salt.
- Coat with grapeseed oil spray.
- Cook at 390*F for 20-25 minutes or until your desired doneness.
- During the cooking time and after, add additional grapeseed oil spray as needed to keep them crispy.
