These potatoes are very similar to what you would expect with a bag of Potatoes O’Brien, only these are freshly cut and prepared.
I adapted this recipe for Air Fryer Roasted Potatoes to make breakfast potatoes with a few different flavors and added vegetables.

- Red Potatoes
- Green Bell Pepper
- Red Bell Pepper
- Sweet Onion
- Seasoned Salt
- Garlic Powder
- Fennel Seed
- Cooking Oil Spray of Choice

How do you make breakfast potatoes in the air fryer?
The first step is preparing the vegetables by either chopping or slicing them per your preference. It’s best to coat the air fryer basket with a cooking oil spray of your choice.
I use Pompeian Olive Oil Spray regularly without issue, but if you prefer a higher heat cooking oil spray use grapeseed.
Once the basket is sprayed, add in all the chopped veggies and then the seasonings and another coat of spray. At this point, these can be cooked at 360*F for 20-25 minutes. If you preheat the air fryer, I would suggest going with 20 minutes, checking on them throughout cooking time to shake or stir up.
All air fryers do heat differently so it’s best to keep a close eye on any new recipe that you try out in the air fryer to avoid overcooking.

Air Fryer Breakfast Potatoes
Ingredients
- 3 Lbs Red Potatoes Diced
- 1/2 Cup Sweet Onion Diced
- 2 Green Bell Peppers Sliced
- 2 Red Bell Peppers Sliced
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Seasoned Salt
- 1/2 Tsp Fennel Seed
- Cooking Oil Spray of Choice
Instructions
- Begin by preparing the vegetables and cutting if needed.
- While preparing, preheat the air fryer for 5 minutes at 360*F.
- Once done, carefully coat the air fryer basket with a coat of cooking oil spray such as grapeseed.
- Add all the vegetables into the air fryer basket.
- Top evenly with seasonings.
- Coat with a good coat of cooking oil spray.
- Cook at 360*F for 20-25 minutes or until your desired doneness and crispness.
- It's best to check on there after about 10-15 minutes to stir or shake up the basket.
- Once done, serve.
