Are the gardens producing lots of squash this season? If so, the BEST way to use fresh squash is with this Air Fryer Fried Squash or Air Fryer Fried Zucchini, we like to do both!

This past weekend, I finally got back in the kitchen and made this tasty Air Fryer Fried Zucchini & Yellow Squash.
We typically pick up fresh squash at our local farmer’s market. For some reason, our squash in the garden never seems to make it, so we have given up on that this year and decided to pick it up at the Farmer’s Market instead.

The best part is this is such an easy recipe to make gluten-free, which is exactly how we make it.
How do you make Gluten-Free Air Fryer Fried Squash?

I decided to make these Air Fryer Fried Zucchini & Yellow Squash just like my Air Fryer Onion Rings.
I make these gluten-free simply by using gluten-free all-purpose flour and breadcrumbs. If that isn’t a need for you, feel free to use regular products.
Gluten-Free All-Purpose Flour will need to be used and it needs to be a 1:1 swap, meaning it’s interchangeable with regular wheat flour. The best brands to use are King Arthur, Better Batter, Cup 4 Cup, or Bob’s Red Mill. These work perfectly for this recipe.
Along with the flour, gluten-free bread crumbs can also be used. We find these easily at Walmart. I prefer to use Panko Bread Crumbs, which are not as fine as the traditional bread crumbs for this recipe.

What do you need for Air Fryer Fried Zucchini & Yellow Squash?
- Yellow Squash
- Zucchini
- Buttermilk
- Breadcrumbs or Gluten-Free Breadcrumbs
- Flour or Gluten Free All Purpose Flour
- Eggs
- Salt
- Cooking Spray
- Foil
Out of Buttermilk? I have a tip for that!
All you need are simple ingredients, many of which you likely have on hand too! If you do not have buttermilk, a simple trick is to replace the buttermilk with a touch of white vinegar and regular milk. It works just the same.

Air Fryer Fried Zucchini & Yellow Squash
Ingredients
- 1 Medium Sized Zucchini Thinly Sliced
- 1 Medium Sized Yellow Squash Thinly Sliced
- 1 Cup Buttermilk
- 2 Cups Gluten-Free All Purpose Flour or Regular Flour
- 2 Eggs Beaten
- 2 Cups Gluten-Free Breadcrumbs or Regular Bread Crumbs
- Salt to Taste
- Grapeseed Oil Spray
Instructions
- Place the zucchini & squash in a shallow bowl or dish and pour the buttermilk over them.
- Let them sit and soak for about 10-15 minutes.
- Prepare a bowl for the flour, a separate bowl for beaten eggs, and another bowl for the breadcrumbs.
- Add a dash of salt to the breadcrumbs.
- Dip the veggies in the flour, dust off any excess.
- Dip them in the eggs, let the excess drip off.
- Coat with the breadcrumbs.
- Place evenly in the Air Fryer.
- At this point, you can add some salt to them or salt them after they are done. It's best to spray with grapeseed oil spray when placing them in the air fryer and again when flipping them.
- Fry them in the Air Fryer at 390ยฐF for about 5 minutes on each side or until they are crispy.
- Use grapeseed oil spray if they look floury, give them a good coat of spray.
- Serve.

You say thinly slice, with no indication of thickness.

Can I put all the vegetables in at once, or do I need to work in small batches?

I do them in batches so I can keep them evenly in the air fryer.

You mention foil – do you put that in air fryer and then put chips in??

You can put foil in the air fryer if you want to avoid the mess on the bottom of the air fryer basket, but you do not have to. It would go in the bottom, then the squash/zucchini on top of it.

I’m going to make these for Thanksgiving. Wondering if I can make ahead and freeze on parchment paper, then toss in a Ziploc bag?

I haven’t tried it that way, so I can’t give a definite answer. It may be mushy though if you freeze it and reheat.

Thanks for the recipe! Just got an air fryer and still trying to figure out recipes. Just a tip on squash bugs – I don’t know where you are. We are near Dallas, Texas and we had about given up on squash too even tho we love it. An old time farmer told us not to plant squash until AFTER July 1 as the squash bug life cycle is normally over by then. We tried it last summer – and we had fresh squash for the first time in years!!!
