Ingredients
  

  • 1 Medium Sized Zucchini Thinly Sliced
  • 1 Medium Sized Yellow Squash Thinly Sliced
  • 1 Cup Buttermilk
  • 2 Cups Gluten-Free All Purpose Flour or Regular Flour
  • 2 Eggs Beaten
  • 2 Cups Gluten-Free Breadcrumbs or Regular Bread Crumbs
  • Salt to Taste
  • Grapeseed Oil Spray

Instructions
 

  • Place the zucchini & squash in a shallow bowl or dish and pour the buttermilk over them.
  • Let them sit and soak for about 10-15 minutes.
  • Prepare a bowl for the flour, a separate bowl for beaten eggs, and another bowl for the breadcrumbs.
  • Add a dash of salt to the breadcrumbs.
  • Dip the veggies in the flour, dust off any excess.
  • Dip them in the eggs, let the excess drip off.
  • Coat with the breadcrumbs.
  • Place evenly in the Air Fryer.
  • At this point, you can add some salt to them or salt them after they are done. It's best to spray with grapeseed oil spray when placing them in the air fryer and again when flipping them.
  • Fry them in the Air Fryer at 390°F for about 5 minutes on each side or until they are crispy.
  • Use grapeseed oil spray if they look floury, give them a good coat of spray.
  • Serve.

Notes

Nutritional information is going to vary on the exact amounts used.
Grapeseed Oil Spray is the best choice due to the high smoke point; however, Olive Oil Spray can also be used.
