How do you cut zucchini for air fryer zucchini boats?
The zucchini should be cut in half lengthwise and scoop out the seeds with a spoon to create the boat shape.

After the zucchini are cut, we also cut them in half again to make smaller handheld zucchini boats.
Then, you can begin to fill them with pizza sauce and toppings.

It’s important not to overstuff the zucchini, mini pepperoni works perfectly for the zucchini boats.

Finish it off with cheese or you can do this in reverse and place the cheese on the bottom and then the toppings, this is totally up to you. I like the crispy cheese on top which is why we do it this way.

How long do you cook zucchini in the air fryer?

The boats will be cooked at 350 degrees F in the air fryer for 8 minutes or until the cheese is browned on top, then an additional 2 minutes if needed.
Be sure to allow room between the zucchini boats so that air fully circulates them.
This parchment liner works very well for air fryer baskets too if you want to avoid any cleanup of your basket.

Air Fryer Zucchini Pizza Boats
Ingredients
- 2 Zucchini More if they are small
- 1/4 Cup Pizza Sauce
- Mini Pepperoni
- Shredded Mozzarella Cheese
- Olive Oil Spray
Instructions
- Cut the zucchini in half if they are long and then again lengthwise.
- Scoop the middle portion out with a spoon.
- Spray the zucchini lightly with olive oil spray.
- Add in the pizza sauce, top with pepperoni and cheese.
- Place them in the air fryer basket.
- Coat with an even coat of olive oil spray.
- Air fry at 350ยฐF for 8 minutes.
- Add an additional 2 minutes if needed to crisp the cheese.
- Repeat if necessary for the additional zucchini.
