I was first introduced to zucchini boats years ago and made them with a variety of ingredients, but I have to say that Zucchini Pizza Boats are my favorite way to enjoy them.
I love that pizza flavor and it’s even better when it’s a “crust” of zucchini, which is a much healthier option too.
How do you cut zucchini for air fryer zucchini boats?
For this particular recipe, I was using long zucchini from Aldi. I decided to cut those zucchini in half to make smaller zucchini boats.
Once they are cut in half, use a spoon and just scoop out the center portion that has the seeds. Essentially, this is how you are creating the inside of your “boat”. There needs to be enough room to fit pizza sauce, pepperoni, and cheese.

How long do you cook zucchini in the air fryer?
If you are making zucchini boats, we air fry this for 8 minutes at 350 degrees. Once it hits the 8-minute mark, if the cheese is not browned a bit on top, simply air fryer for an additional 2 minutes.
If you are using a Ninja Foodi, the cook times will be the same. For either the Air Fryer or Ninja Foodi, be sure to use your air fryer basket for this recipe.
This parchment liner works very well for air fryer baskets too.
Can you freeze Zucchini Pizza Boats?
Air Fryer Zucchini Pizza Boats are best served warm right out of the air fryer. I’d suggest just making enough to eat at the time you are eating them.
They can be stored in the fridge for a bit longer and reheated; however, I do not suggest freezing them. They are best served fresh, so they likely will not hold or taste as good as they do right out of the air fryer.

These are easy to customize to the toppings you love on your pizza, think of any pizza toppings you would prefer and use those.

Air Fryer Zucchini Pizza Boats (Ninja Foodi)
Ingredients
- 2 Zucchini More if they are small
- 1/4 Cup Pizza Sauce
- Mini Pepperoni
- Shredded Mozzarella Cheese
- Olive Oil Spray
Instructions
- Cut the zucchini in half if they are long and then again lengthwise.
- Scoop the middle portion out with a spoon.
- Spray the zucchini lightly with olive oil spray.
- Add in the pizza sauce, top with pepperoni and cheese.
- Place them in the air fryer basket.
- Coat with an even coat of olive oil spray.
- Air fry at 350 degrees for 8 minutes.
- Add an additional 2 minutes if needed to crisp the cheese.
- Repeat if necessary for the additional zucchini.
