Ingredients

  • 1 Cup Gluten-Free All-Purpose Flour
  • 1/4 Cup Granulated Sugar
  • 1 Tsp Baking Powder
  • 1/4 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 1/2 Tsp Ground Cinnamon
  • Dash of Nutmeg
  • 1/2 Cup Cream or Half and Half
  • 1 Large Egg
  • 1 Tsp Vanilla Extract
  • 1 Medium Banana (Ripe)
  • Grapeseed Oil Spray

Glaze

  • 1 Cup Powdered Sugar
  • 2 Tbsp Cream or Half and Half
  • 1 Tsp Vanilla Extract

Instructions

  • In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, salt, cinnamon, and dash of nutmeg.
  • Use a Danish Dough Whisk and whisk the ingredients then carefully whisk in the cream, egg, and vanilla extract.
  • Fold in the banana and form a ball with the dough.
  • Preheat the air fryer to 360°F for 5 minutes.
  • Carefully coat the basket of the air fryer with grapeseed oil spray.
  • Use about a tablespoon full of dough and create dough balls, add those to the basket of the air fryer, and leave room between each one. These may need to be done in batches, typically 4-6 will fit in the air fryer basket.
  • Coat the dough balls with a light coat of grapeseed oil spray.
  • Air Fry at 360°F for 8-9 minutes.
  • Carefully remove and repeat for additional batches. Remember additional batches will not take as long to cook since the air fryer is already heated.
  • While the fritters are in the air fryer, in a small bowl combine the powdered sugar, milk, and vanilla extract to create the glaze.
  • Drizzle each fritter with glaze when fully cooled.
  • Serve.

Notes

Using Grapeseed Oil Spray as needed helps allow them to get crispy because a little light oil is necessary.  Olive Oil Spray can also be used; however, remember that Grapeseed Oil Spray has a higher smoke point.
The gluten-free all-purpose flour needs to be a 1:1 ratio with regular all-purpose flour.  The best brands to use are King Arthur, Better Batter, Cup 4 Cup, and Bob's Red Mill.
If you need less sugar, use Splenda.
