Ingredients

  • 1 1/4 Cup Old Fashioned Oats
  • 2 Tbsp Packed Light Brown Sugar
  • 1/4 Cup Chopped Walnuts
  • 1/4 Cup Chopped Pecans
  • 1/2 Tsp Ground Cinnamon
  • 1 Tbsp Olive Oil
  • 1/4 Cup Honey
  • 1/4 Cup Creamy Peanut Butter (See Note)
  • 1 Tsp Vanilla Extract
  • 1/2 Cup Chocolate Chips (See Note)

Instructions

  • In a large mixing bowl, mix the oats, brown sugar, walnuts, pecans, and ground cinnamon. Mix this well.
  • Add the olive oil, honey, peanut butter, and vanilla.
  • Mix until the ingredients are well mixed and the dry ingredients are incorporated with the wet. You will have a thick mixture. I like to use the Danish dough whisk, but you can use a mixing spoon or large fork. A regular whisk will cause the mixture to get stuck in the middle.
  • Pour the mixture into the air fryer basket and spread evenly.
  • Air Fry at 300°F for 20 minutes, mixing 3-4 times throughout the cooking time.
  • Once it's nice and golden, spread the granola on a tray or cookie sheet to cool completely.
  • Add the chocolate chips in when you spread the granola to cool. (See Note)
  • Serve and enjoy!

Notes

Chocolate Chips -
These can be added either with the ingredients to cook in the Air Fryer, if you do this step then the granola will need to be mixed more often to avoid burning.
The preferred method in our opinion - we added them while the granola was cooling, it allowed the chocolate chips to keep their shape.
Peanut Butter -
It's best to NOT use an all-natural peanut butter, it will get grainy when under high heat.  We used Skippy Peanut Butter for this recipe.
