Ingredients
  

  • 4 Boneless Skinless Chicken Breast (Thinly Sliced)
  • 3/4 Cup Gluten-Free Plain Bread Crumbs
  • 1/4 Cup Grated Parmesan Cheese
  • 1/2 Tsp Dried Rosemary
  • 1/2 Tsp Garlic Powder
  • 1/4 Tsp Garlic Salt
  • 1 Tsp Dried Parsley
  • 2 Eggs
  • 2 Cups Marinara Sauce
  • 1/4 Cup Shredded Mozzarella Cheese
  • Dried Parsley to Garnish
  • Cooked Spaghetti Squash

Instructions
 

  • Begin by flattening the chicken if it is not already flattened.
  • In a shallow bowl, mix together the bread crumbs, parmesan cheese, and seasonings. 
  • In another shallow bowl, add in the eggs and whisk together well.
  • Spray the basket of the air fryer with olive oil spray.
  • Dip each chicken breast in the egg mixture, shaking off any excess and then into the bread crumb mixture.
  • Shake off the excess.
  • Place the chicken breast in the air fryer basket.
  • Spray evenly with olive oil spray.
  • Cook in the air fryer at 390 degrees for 7 minutes.
  • Carefully flip the chicken and spray with olive oil spray.
  • Cook for an additional 7 minutes. While this is cooking, be sure the spaghetti squash is cooked and warm up the marinara sauce.
  • Be sure the chicken is at least 165 degrees to be fully cooked.
  • Serve the chicken over a portion of spaghetti squash.
  • Top the chicken with warm marinara sauce and mozzarella cheese.
  • Garnish with parsley and serve.
