1Pound Ground Beef (80/20)
1/2CupCorn Meal
1/4CupChicken Broth
3TbspGluten-Free Worcestershire Sauce
2TbspDry Ranch Seasoning
2TbspChopped Pepperoncini
1WholeEgg
4TbspUnsalted Butter, Sliced
4WholePepperoncini
Instructions
Preheat the air fryer to 350°F with an 8-inch cake pan in it for 5 minutes. This helps get an instant sear on the meatloaf.
In a large mixing bowl, combine the ground beef, corn meal, chicken broth, Worcestershire sauce, ranch seasoning, chopped pepperoncini and egg.
Mix until combined, shape into a meatloaf.
Carefully place into the preheated cake pan.
Add the butter slices and whole pepperoncini on top of the meatloaf.
Air fry at 350°F for 20-23 minutes or until the internal temperature reaches at least 165°F.
Let meatloaf rest for 5-7 minutes before serving.
Serve.
Notes
80/20 Ground Beef is the best option for a juicy meatloaf. 90/10 can be used but may be a bit drier than 80/20.Corn Meal is used to make this gluten-free, if that's not a need, bread crumbs can also be used.
