1PoundBoneless, Skinless Chicken Breast
2TbspOlive Oil
2TbspBalsamic Vinegar
1TspLemon Juice
1TspSalt
1TspGarlic Powder
1TspItalian Seasoning
1/2TspGround Pepper
2FreshBasil Leaves
5SlicesFresh Mozzarella, Halved
4SlicesTomato, Halved
Instructions
Trim the chicken breast to equal thickness.
In a large bowl or Ziploc Bag, add the olive oil, vinegar, lemon juice, salt, garlic powder, Italian seasoning, and ground pepper. Mix to combine.
Take the basil leaves and roll them in your fingers to release the oils and then add them into the bowl or bag.
Add the chicken to the marinade and poke the chicken with a fork to coat it with the marinade.
Place in the fridge and chill for 3 hours or overnight.
Preheat the air fryer at 360°F for 3-4 minutes.
Add the chicken breast to the air fryer.
Air Fry at 360°F for 10-12 minutes. The chicken is fully cooked when the internal temperature reaches at least 165°F. If you are using thin chicken breast, check on them at 8 minutes.
Cover the chicken breast by placing a slice of fresh mozzarella and fresh tomato slices, alternating between the two.
Air Fry at 360°F for 2-3 minutes until the cheese is melted.

Notes
Serve over pasta, with bread, or salad.If the mozzarella has a lot of liquid, use a paper towel to pat dry before adding to the air fryer.
