Clean and scrub potatoes, pat dry with a paper towel.
Cut the potatoes into 1/4-inch thick slices.
Place the potatoes in a large bowl and rinse them.
Once rinsed, leave them in the bowl and fill with cold water then cover.
Leave the potatoes in water for at least 45 minutes to 1 hour, this will help them come out crispy.
Preheat the air fryer to 350*F or Ninja Speedi to 330*F for 5 minutes.
Take the potatoes out of the water and place them on a kitchen towel. Use a second towel to dry them as much as possible.
Place the dry french fries into a large bowl (reuse the same bowl).
Pour the olive oil and truffle oil in the bowl and mix the french fries well to coat.
Sprinkle with salt and pepper.
Mix well so they are fully coated.
Place them in the basket, leave room in between, and make sure it's an even layer. These may have to be cooked in multiple batches.
Air fry at 350*F or Ninja Speedi at 330*F for 10 minutes, then mix and turn and cook for an additional 8-10 minutes or until your desired crispness.
Once all fries are done, place them on a cookie sheet lined with parchment paper and sprinkle cheese and parsley on top.
Serve!
